This recipe is from my Granny and it is delicious! I made it just the other day for Calum’s birthday and an extra one for work – it went down pretty well so I thought I’d share the yumminess.
- 115 grams butter (1/4lb)
- 2 medium mashed bananas
- 2 eggs
- 1 teaspoon of vanilla essence (or rum essence or plain old rum!)
- 280 grams plain flour (2 cups)
- 1 teaspoon of baking powder or soda
- Half a teaspoon of salt
- Half a cup of milk
Heat your oven to 180C, 350F or Gas Mark 4-5
Grease and lightly flour a cake tin (makes a great loaf or an average round cake
Cream the butter and sugarand beat until light (use a metal tablespoon if you have one and stir up the butter and sugar until it’s quite light)
Add mashed bananas, eggs, vanilla essence and beat well.
Sieve or mix the flour, salt and baking powder and then add to the mix.
Slowly add milk and beat until blended – I sometime feel the milk might be a tiny but too much so hold off from putting it all in at once and if you feel the mix is too sloppy then don’t add the full half cup.
Spread in the tin and pop in the oven for 45 minutes or until the knife goes in the cake and comes back out with no wet cake mix on it.
Leave it to stand and then ice when cool.
I love this cake with icing and usually just do icing sugar with lemon juice and a tiny bit of hot water. If you feel like making it extra creamy just add some butter in with the icing sugar and mix well. Alternatively you can do a really thin water and icing sugar drizzle over the cake. Grate some lemon or orange peel over the top and voilà!
