Bolognese – a recipe for kings and queens

At the tail end of the summer of 2013, I was lucky enough to visit Bologna, the origin of childhood staple spaghetti bolognese.  It’s a meal I distinctly remember my parents making for my brother and I and I’ve loved it my whole adult life.  Now, for reasons unknown, even to myself, despite spending one fantastic evening hanging out in Bologna city centre, eating at a street restaurant, to the tune of Italian jazz, I didn’t actually try their bolognese!  What a mistake-a to make-a!

Actually, I suspect the reason would have been diet related – trying to cut out wheat in Italy, or in fact, anywhere that serves great food is tricky but I was sticking to my guns.  Cie la vie, I probably missed out.  Fabulous recent discovery in my candida diet endeavours, however, is gluten/ free pasta from Heinz.  Now I’ve tried gluten free pasta before but it’s always been gloopy, bloated and not all that delicious.  This Heinz one is yummers and gets a total thumbs up from me.  I can eat pasta dishes again!

So, I wanted to cook something hearty, tasty, filling and delicious – with pasta back on the menu, bolognese was the way to go! A quick online search and up jumped the BBC Good Food recipe with the description, ‘my husband says this is the best bolognese he has ever tasted’.  Pretty awesome review … so I followed the recipe, threw in some extra wine, some lovely dried herbs, loads of garlic, bacon (oh yes), fresh chilli and made what I would soundly hail as the new meal in my life.  Buy the following ingredients, find the full recipe here and enjoy yourself a really yummy tea tonight!

  • 500g Fresh Beef Mince.
  • 400g Dried Spaghetti.
  • 4 Rashers of Smoked Streaky Bacon, finely diced.
  • 2 Tins of Plum/Chopped Tomatoes.
  • 6 Fresh Cherry Tomatoes.
  • 2 Medium Onions, peeled and finely diced.
  • 2 Sticks of Celery, trimmed and finely diced.
  • 2 Carrots, trimmed and finely diced.
  • 2 Cloves of Garlic, peeled and finely diced.
  • 1 Medium Chilli (optional), seeded and finely sliced
  • 75g Freshly grated Parmesan Cheese, plus extra for grating over.
  • 2 tbsp Tomato Puree
  • 1 Beef Stock Cube.
  • Glass of red wine (optional)
  • Herbs:
  • 2-3 Sprigs of Fresh Rosemary.
  • Handful of Fresh Basil, plus extra for Garnish.
  • 1 tsp Dried Oregano.
  • 1-2 Fresh Bay Leaves.
  • Olive oil.
  • Sea Salt and Black Pepper

Make it candida diet friendly by using wheat free pasta instead of crusty bread and enjoy the Italian inspired goodness – with a kick of chilli, you might want to pour a nice glass of red vino to wash it all down with.  Perfect meal for the end of a working day or a super Saturday of deliciousness.
